Are you looking for precise control of the humidity or are you just
looking for some low tech ways to add/remove humidity?

If you're just looking for low tech what about using
humidifiers/de-humidifiers designed for home use?  Some of them may have
digial humidity controls, but most have some sort of analog controls
that could be set via trial and error using one of those cheap
thermometers that have a humidity dial attached (is there a technical
term that describes a device for measuring humidity?).
