There is Marti Gra and the Jaz Fest. I have wanted to go to Las Vegas (AirTran is now ~$99 1 way) and rent a 4x4 and head out in to the grand canyon. There is also Hover Dam. Dinner is cheap in Vegas too. Area 51 as well. :)
Don't waste your time with a 4x4. Get a convertible for the highway, cause the drives takes awhile, and you might as well do it in comfort. You'll also get to visit Hoover Dam on the way, and be "randomly" searched for bombs. The car rentals cost less at the hotels than at the airport, btw.
Here are some pics from Vegas, the Hoover Dam (we skipped the tour) and the Grand Canyon:

Next time I'd like to camp out there for a couple of days. Bring a jacket, btw - it's a bit chillier at that (ridge) elevation.
If you stay in Vegas for any amount of time, I recommend catching "O". Well worth the money.
