They're both excellent. The former talks about the origins of 
various foods and then gets into a scientific discussion of 
cooking. The latter is more of a scientific cookbook. Want to
They're really fascinating because they discuss cooking and
food preparation from the viewpoint of a scientist- what happens
when you cook, why things are done the way they are, etc..
