In my Postfix setuip, I have:

relayhost = [smtp.mindspring.com]


Note the use of the brackets - without them, Postfix finds the MXs for 
the specified domain, and sends to those MXs.  The brackets turn off the 
MX lookup, and uses the specified domain directly.
