The benefits of more than one phase in any high load situation is you
can get more power into the location by running more than one leg of
feed.

For example, if our lighting needs were 1200A at 120V only, you run into
problems with wire size to the distributions panels, etc.  If you run 3
phase at 400A/leg, that's more manageable in the switchgear and wiring.
